Budget-Friendly in the Kitchen

Breakfast for dinner was one of my favorite meal occasions as a kid. Instead of rolls and baked potatoes with a casserole, my mom would occasionally surprise us with pancakes, hashbrowns and waffles! Breakfast for dinner can range from over-the-top fancy to cereal out of a box. Here are some fun ideas to start the tradition (or shake things up a bit) in your own home.

Meat

Breakfast meats come in all sorts of varieties. Bacon, sausage patties and links, chorizo, chicken fried steak, ham, pancetta and even smoked salmon are common breakfast staples. Sticking with a low-cost side dish meat, such as bacon, will keep your breakfast dinner budget-friendly.

Potatoes

Potatoes are really inexpensive, and can be used in a variety of ways to complement a breakfast. Hashbrowns or country-fried potatoes are my favorite. You can even use them as an easy base for a breakfast casserole.

Bread

Bread is another cheap base for a breakfast meal. Use it for toast or a breakfast bread pudding. My grandma used to cut a hole out of bread with a cup and fry and egg in the middle (we called it “peek-a-boo eggs”). At-home dough mixes can also be used for cheap pancakes, waffles, biscuits or muffins.

Fruit

Just about any fruit goes well with breakfast! Melon is an inexpensive and tasty option, as are strawberries.

Dairy

While pancakes are actually a cheaper option, cereal is always an old standby favorite. You might also want to serve milk with oatmeal, grits or cream of wheat. Yogurt is another choice that goes really well with fruit and granola.

Some of my favorite spins on the traditional “breakfast for dinner” are international favorites like crepes, huevos rancheros and Belgian waffles. You also can’t go wrong with old American favorites like ham and eggs or biscuits and gravy.
